Le 15 mars: quelques spécialités culinaires du Cambodge

L’Amok : c’est une préparation de filets de poisson du lac, étuvés dans un jus de curry doux et de basilic, coupés en dés, et présentés dans un petit panier de feuilles de bananiers tressées. C’est excellent J.

Le curry khmer : curry jaune de carottes, de pommes de terre, de petites courges rondes et d’aubergines au basilic et à la coriandre : très bon ;-)

Le riz gluant : sucré et fourré dans un fin tuyau d’écorce de bambou et truffé de grains de sésame : une friandise agréable.

Le Prahok : carrément dur dur L.  C’est une sauce épaisse, brunâtre aux reflets verts foncés à base de déchets pilés de poisson faisandé et boucané, longuement marinés avec des herbes fortes et des piments. L’odeur est puissante et putride. Pour un palais occidental moyen, c’est éprouvant. Pour son estomac aussi. Les Cambodgiens le savent, mais eux s’en régalent. C’est pour eux une gourmandise délicate. Ils ne vous en proposent pas, pour ne pas vous incommoder. Ils savent ce qui pourrait vous rendre désagréable. S’ils vous en proposent, présentez leur un peu de fromage de Herve : 15 partout !

Les araignées frites : grosses araignées noires, velues, de la taille d’une mygale, qu’on trouve dans les collines aux environs de Phnom Penh. Elles sont frites à l’huile et parfois présentées en brochettes : très bon paraît-il, mais vu l’aspect je n’ai jamais essayé. J
